Persimmon Holiday Cocktail

Serves: 4 drinks (you'll have some leftover syrup!)

As I was writing my hangover + holiday drinking guides (you're signed up to my newsletters right? Link is here if not.) I thought I should include some healthy drink options that are low sugar and seasonal. This recipe is made with a persimmon syrup and organic Hope vodka.  Make sure you always take your activated charcoal when drinking or eat foods that upset your gut.

Persimmons in latin means "food for the gods" pretty rad right? Plus, they are rich in vitamins A, C, E and are a great source of fiber. Although they do contain some natural sugar, eat in moderation and when in season!

 

Ingredients

Drinks:

8 ounces organic vodka
8 ounces persimmon syrup
2 ounces of lemon
Bubbly water for topping
Star anise for making it pretty!

Syrup:

3 small persimmons, roughly chopped
2 lemons, for juice and zesting (about 2 Tablespoons zest)
1 tablespoon apple cider finager
1/2 cup xylitol, monk fruit, or organic cane sugar
3/4 cups water
4 star anise
 

Method

Syrup:

  1. In a saucepan combine chopped persimmons, lemon juice and zest, apple cider vinegar, sugar, water, and star anise at a medium heat.

  2. Simmer mixture for about 20 minutes, stirring occasionally. Turn off the heat and remove star anise. 

  3. Blend mixture until smooth and then I like to put it through a strainer, although not necessary, just depends on how thick you want it.

  4.  Using a funnel, pour it into a container and get it at least to room temp. I suggest making it ahead of time and storing it in the fridge. Should last a week but can also be used in a salad dressing, YUMMY!

Drinks:

In a shaker, shake the vodka, persimmon syrup, lemon, vinegar and evenly pour into 4 cups. Add ice and bubbly to top.
