Peppermint Pomegranate Mules with Ginger

First of all, how is it already Christmas? Time has been flying and I am trying my best to be in the moment and slow down. It is so hard with so many things going on and places to be. I was asked to work an event and make "healthy cocktails" what does that even mean. Well, first of all, each type of alcohol affects our bodies differently (whiskey vs beer) and then of course what you mix it with matters. If you stick to clear alcohols like gin, tequila, and vodka, and if you can find organic versions, that is even better. Check out my favorite guide to drinking here.

I wanted to make something festive and of course something that tastes delicious and would be fun to make in a punch bowl or just for some family. I found organic pomegranate juice at Trader Joes after fresh pressing it for the event so I would recommend buying that. Has anyone ever tried juicing a fresh pom? Not only is it time-consuming but it is so dang messy, I hope you enjoy and make sure to take you activated charcoal!  Happy holidays amigos!

Ingredients: 

  • 1/2 cup organic pomegranate juice (no added sugar) 

  • 2 tablespoons freshly grated ginger

  •  1 bunch fresh peppermint 

  • 1/4 cup freshly squeezed lime juice

  • pomegranates seeds (arils) for topping

  • 4 ounces vodka (I use Organic Vodka) 

  • 2 cups bubbly water of choice or  ginger beer (but be careful of the sugar content)

  • stevia for sweetening, not necessary but up to you

  • ice 

 

Instructions:

  1. Add ice to 4 cups.

  2. In a shaker, mix pomegranate juice, fresh ginger, lime juice, and vodka. Distribute to cups evenly.

  3. Top with bubbly water, mint sprigs, and pomegranate seeds.

    *If you are making this into a punch bowl add all ingredients and save some mint and pomegranate seeds for topping.
